An inclusive vision of Latin American cuisine and sweeping views of the mountains will be found at the rooftop of The Source Hotel in Denver this fall.<\/p>\n Empanadas, arepas, skewers, tacos, Peruvian takes on sushi and sashimi and more flavors from up and down the Americas are anticipated at Cimera, the newest restaurant at the hotel, located at 3330 Brighton Blvd. in the River North Art District. Pronounced si-MEH-rah \u2014 the name is a Spanish word for \u201csummit\u201d \u2014 Cimera will open on the rooftop deck by late October, said Tom Dillon, founder and CEO of Apicii, the restaurant\u2019s hospitality group.<\/p>\n Apart from those classic, well-known dishes, presented in a tapas format, the full, exact menu is forthcoming, the restaurant said in a statement. The statement teased a couple of other offerings, including a clam dish with deep lilac and green colors; Iberico ham croquettes with yellow and orange flower petals on top; and chicken and shrimp ravioli.<\/p>\n \u201cWe don\u2019t want people to feel like it\u2019s too expensive or it\u2019s too complicated,\u201d Dillon said. \u201cI thought we could deliver both a great culinary experience, but also a fun, lively environment.\u201d<\/p>\n After working in the restaurant industry in New York City, Seattle and Minneapolis, Dillon returned to Denver three years ago to bring a new concept to The Source. He drew inspiration from his culinary travels to South America and past collaborations with chef Richard Sandoval (Tamayo, Toro Toro, Stoke & Rye, Venga Venga), he said.<\/p>\n He ultimately partnered with Diego Mu\u00f1oz, a Peruvian chef whose resume includes restaurants in Madrid and Lima. The executive chef who will manage kitchen duties, however, is Geoff Cox, formerly a chef at Hop Alley<\/a>, a Michelin-recommended modern Chinese restaurant in Denver.<\/p>\n The restaurant\u2019s drink menu, devised by Adam Griggs, includes takes on classic Latin cocktails, such as pisco sours, mojitos and daiquiris.<\/p>\n Cimera will replace The Woods, a property that had been associated with New Belgium Brewing since The Source opened in 2018<\/a>. It closed in June. New Belgium also ran a small pilot brewery<\/a> on the ground floor, but it had previously closed.<\/p>\n The Source Hotel rooftop is currently inaccessible as designers flip The Woods\u2019 minimal appearance for a more vibrant one featuring a three-wall mural by artist Aaron Petz, Dillon said.<\/p>\n \u201cI really wanted the first thing that I did back in Colorado to be really special,\u201d Dillon said Tuesday. \u201cI felt really strongly that this was a great direction for it.\u201d<\/p>\n Cimera is the second restaurant announced this year to open in the Source Hotel. Ceci! Italian Lounge, chef Alon Shaya\u2018s sister concept to Safta, an Israeli restaurant also in the hotel, is expected to open<\/a> early next year, said Julia Hollings Alfonso, a publicist for Cimera.<\/p>\n The Source Hotel, with 100 rooms and eight stories, was originally created by Zeppelin Development in 2018 and sold to Stockdale Capital Partners in 2022<\/a>.<\/p>\n
